Profumo: It expresses a bouquet of tropical fruits and dried fruit, with hints of citrus and aromatic herbs

Gusto: In the mouth candied citrus fruits, pink grapefruit and floral touches predominate, in a balanced, persistent whole and with an acidity that continues to call the sip.

Abbinamenti: Oysters, seafood, shellfish, chicken curry and aromatic cuisine in general.

VINIFICATION:
Grillo grapes are harvested by hand at different stages of ripening: some when they have reached the peak, others after they have been left to dry on the plant and have lost part of their weight. Part of the grapes are left on the vine longer. Through dehydration on the plants themselves, a more delicate and natural drying process is promoted. The other part of the grapes are dried on racks for 15 days. The dried bunches can lose up to 10-15% of their original weight. After a delicate destemming the wine decants for about 24 hours. Fermentation takes place at a temperature of
17-18 ° C for about 12-15 days. The wine rests on the lees for about 3 months before bottling.
